Did you have a nice holiday?  We did.  Santa came to our house and was good to all of us.  My mom and my grandmother were here for dinner, which was very nice.  Dinner turned out lovely, and unlike last year at Thanksgiving, wasn’t long cold and later re-warmed since traffic had everyone held up for much longer than we expected.
Having my mom and my grandmother both her at the same time was comical.  Every time someone said, “Mom” the three of us turned to answer, “Which one?”  tee hee.

I think I spent yesterday in a food coma.  Which would be all well and good except I have one day left to get ready for tomorrow.  Laundry.  Packing (oh, crap, I haven’t even started to think about what to pack).  Removing the holiday decorations and packing those away.  My brother offered to take on that task, so at least I know if I can’t get to that one I can leave it for him.  I also need to color my hair (already in process!) and removed all the chipped polish from my fingers and toes.  If I can manage it, I need to run out to the store.
Oh, and I didn’t actually take vacation today, so at some point or another I need to take a peek at what’s going on at the office.

Fuck - I need to pay bills and do my banking.  I keep forgetting.
Time to hit the shower…  rinse this color out and get on with the day.  Thankfully I’ve already had my coffee!

It has been a fabulous holiday.

Despite the absence of my mom’s husband, who was “not feeling well” enough to make it for dinner. Despite the minor trip we took dumpster diving for the overlooked Webkinz super-secret code you can only get from the tag on the damn stuffed animal (how am I the only one to know this??), which was later found in the trash in the kitchen (what’s more awesome than a trip to the dumpster? An unnecessary trip, of course!).

Despite all of that… it’s been one of the best holidays in a long time. I’m going to try to convince my brother to drive us to see a showing of The Golden Compass, so I can start reading the book Santa brought me tomorrow (I always prefer to see the movies first, since the book will ruin a good movie every time). Otherwise we’ll catch the movie tomorrow some time.

Hope everyone is having a safe and fabulous holiday as well.

PS - I’m way too stuffed to eat another bite.  Except maybe a little bit of that cherry dessert…  mmm.

To my dear friends and family: Fear Not.

You were not removed from my holiday card list this year.  I seem to have given up on trying to maintain any semblance of the ability to put a stamped envelope into an actual mailbox.  So much so that I didn’t even bother to buy holiday cards this year, and truth be told I doubt I will buy some after this season is over for next year.  So much so that I recently changed purses and found an old book of 37-cent stamps and was delighted for about three seconds before the realization hit me that I have no idea how much a single stamp is supposed to cost anymore.

To my dear friends and family, and to everyone else for that matter: Happiest of Holidays to you and yours.  I made you a delicious pie.

The Eye

eyes

You know The Eye, from Lord of the Rings? All fiery and twitchy and red?

What IS it with my eyes? Last time I think it was allergies, but this time it’s only one eye. While it’s not fully on gross-out pink eye (it’s just the PINK part of pink eye, not that other gross part - let’s not speak of it, ok?) I still hate that there’s something going on with anything to do with my eye.

In the meantime I’m washing my hands so often they are going to be dry and scaly soon. I refuse to cook - just in case! Which normally wouldn’t be a problem but then I’m supposed to make the entire dinner in two days.

Certifiable

How cool is this?  My company is sponsoring a CPR/First Aid certification class for interested employees.  For free!
At this time tomorrow, I will be taking part in that class.  By the end of the day tomorrow, I’ll be all certified and hopefully even a little bit prepared if at some point something should happen and I will need to use the training.

Waking at 3:30AM in pain and in need of Advil or Motrin or *something* is not awesome.

Waking at 3:30AM and limping to the medicine cabinet in search of relief, is one thing.

Breathing a sigh of relief at the sight of the bottle of Aleve is another.

Finding that someone put the fucking EMPTY BOTTLE BACK IN THE CABINET is just plain unacceptable.

Someone is lucky I didn’t brain him with the empty bottle.  I’m just saying.

I’m going to try to post more often. Every day if I can, even if it means some random snippet of the day. I have an account I don’t use at vox, and if all else fails there is always the question of the day.

Today’s share with the class: Report cards. Kiddo got his first letter grade report card this week. Three B’s and two C’s. Not terrible, but room for improvement.

The morning of the conference, I found a note he stuck under my door while I was getting ready. Due to the various embellishments done in colored markers around the outer margins, I could tell this note had been written at school at some point. Here is a text version of the note, but at some point I’m going to scan and save this one. I’m sure you can understand once you have read it.

December 14, 2007

Dear Mom/Dad,

The purpose of this letter is to inform you that Mrs. S_________ requests that I attend the parent/teacher conference.

I think I should come because she is talking about me, and she understands if I don’t come. Will you take me?

Me, Kiddo and his Dad met with the teacher and talked through the report card and some other things. I do love his teacher this year. Her philosophy on teaching matches many of my own philosophies on parenting - setting the expectation and giving the responsibility to the kids, and helping to support them in managing their responsibilities. Not doing everything for them or wrestling them into doing everything “the right” way or “my way” or whatever other way requires a fight between what he wants and and what I think he needs.

I love hearing from the teachers. It’s so interesting to hear their thoughts and to recognize so much of either myself or his father in him. Things we never actively taught him, like sneaking a book under his desk and reading while the teacher is presenting (that was me). Or the endless drawings on the margins and borders of his school papers (his dad, and also me, but mine is mostly doodling). During our talk today his dad mentioned that he has seen some of Kiddo’s school papers with all the drawings all over them, and he compared those to some of the school papers he had from when HE was in fourth grade. They all had the drawings all around the page.

It’s hard to keep track of it when you’re in the thick of the day-to-day grind. But, sometimes I come across something like that catches my eye, or bends my ear and I am reminded that we totally made this little guy. He is certainly his own person but in some ways he does things because of what we passed down to him. He’s all bits of me and his dad and his own self all mashed together.
I think that is just so endlessly cool.

I saw the weather forecast calling for rain over the next 4 days.  I thought it was too good to be true.  I love the rain, and I don’t know if it is the same in other areas of the country, but probably close to eighty percent of the time when the forecast calls for rain, there isn’t a cloud to be found in the sky.  Let alone any raindrops.
So tonight when the trickle of raindrops started and I could hear the the sloshing of tires on the wet pavement, it made me smile.

Bon Appetit, or whatever

My friend asked me to send her a recipe for chili.  I do love my chili recipe (no beans, no beef, yet delicious), and it’s not that I keep it secret or anything it’s just that I don’t exactly measure anything when I cook.  Yet: Delicious!  Also, probably highly annoying for people who need to measure and follow a recipe exactly (aka: my brother who you would see rolling his eyes when he sees me pouring measurements freehand while I’m the kitchen.  If you keep watching you will also see him going back for seconds and thirds of all my cooking.  Yeah.).
To illustrate, I will share with you what my “recipe” entails.  This is sort of cheating, because I am cutting/pasting it from my email to this entry.  Anyway.

I’m sending my chili recipe but you know I don’t actually measure anything so all measurements are approximate (or, in fancier cooking language: “to taste“).  Ok, don’t hate me - I am NOT scientific with my cooking.  So, to help explain the gist of it I have notes instead.

Notes:
1. The seasonings are to flavor the meat - so however you like it flavored. You can add in flavorings you like - because that’s what will make it taste good to you.  You don’t have to use what I used, is what I’m saying.  I read the ingredients on a pre-packaged thing of chili-flavoring and that’s how I came up with my seasonings.
2.  The cumin gives the chili that “smokey” flavor and the chili powder/cayenne pepper gives it the heat, mostly.  I put 2-3 tablespoons of ground cumin for the recipe below but honestly - I have NO idea.  It was a LOT of cumin.  And still… delicious chili.  So start with 2-3 tablespoons and go from there.  If you think you put too much in, add a dash or two more anyway.  Hell, you’re going to cover it with cheese and maybe even sour cream later anyway.  Plus you don’t want a bowl of flavorless meat later on - you want chili!  So dash a little more in there.  Then add a crack or two more of some pepper.
3.  Anaheim chilis are not very spicy, but I feel like it’s not chili without a chili pepper, so that’s why it’s there.  I remove the seeds from mine, too so that also eliminates more of the chili heat.  If your family can handle it then leave them in.  Still not as crazy-spicy as some peppers.
4. If you are a bean eater, you’re more than welcome to add in a can of beans - which I guess you would do when you add the tomato parts.  If you do add the beans - you might need to adjust the cooking temperatures and times indicated to allow the beans to be all cooked when you eat them.  For all I know they are cooked when they come out of the can but since it’s not my thing I’ll leave that precision to someone who would know.  ;)

Ingredients:
1 package ground turkey
1 red bell pepper, cut in bite size-ish peices.
1 green bell pepper, cut in bite size-ish peices.
1 anaheim chili (or one fresh chili pepper of your choice - serrano, jalpeno, etc. depending on the spice you like), cut in bite size-ish peices.
2-3 green onions (you can use whatever kind of onion you like, and as much or as little as you prefer in your food), sliced/diced.
2 tbsp cooking oil (can use olive oil, too)
1 can petite diced tomatoes (not sure the exact size but it’s the one closest to a regular soup-can size) - I do not drain the liquid out of mine.
1 small can tomato paste
2-3 tablespoons ground cumin
1 tsp (or more, or less!) ground cayenne pepper
chopped, ground, sliced or minced garlic (as much or as little as you like)
salt, pepper (as much or as little as you want)
1/2 to 3/4 can of water (I used the diced tomato can…)

OMG - finally the recipe directions!

Directions:
Sautée the onions in the cooking oil for a bit, until they lose their sharpness.  This flavors the oil which will then flavor the meat.  I sautée mine until they almost start to blacken.

Actually that’s a lie - I had them in the pan while I cut up the peppers and the chili and then noticed they were almost burning and thought OH, shoot-Time to put the meat in the pan!

Add the ground turkey, cumin, salt, pepper, and cayenne to the onions.  Woohoo - burnt onion crisis narrowly avoided and we’re back on track!  Crumble the turkey (or, you know - just stir) as it browns.  Add more spices as it cooks until you think it’s good.

When the turkey is almost done cooking - add in the peppers and chilis, as well as the garlic.  Give them a few minutes to “mingle” over medium heat.

Then:
Transfer meat to your crock pot.  I didn’t bother to drain the meat since it’s turkey and pretty lean anyway.

This step is optional:
Mix the diced tomatoes, tomato paste, and a little bit of water in the now empty pan over medium pan - just enough to break down the paste and get a nice thick sauce going.  You can add this stuff directly to the crock pot if you want to and stir it all together there.  I worry about tomato paste “clumps” so I do this extra step. In reality once the stuff heats up in the crock pot it will all mix together just fine.

Last step:
Stir in the tomato mixture with the meat in the crock pot.  Add water until you think you have the right consistency - remembering that the crock pot “creates” liquid so only add enough water until it’s a little bit thicker than what you want the end result to be.  Don’t worry if you add too much liquid - you can always just pour some out later or use some bread to soak it up.  If it’s too think later you can add in liquid to smooth it out.  Whatever!

I started my chili at about 2:30 and wanted to eat at 5, so I put it on high and stopped to stir (or, taste) every hour or so.  Smells delicious!  It was all ready to go at 5.  If you wanted to put it on low and leave it for a couple hours more it shouldn’t be a problem.

That’s it!  It took me longer to type this out than to make it.  :p

I didn’t include the part where you top with cornbread or sour cream and cheese or whatever you put on your chili because if you need me to tell you that part, then you probably shouldn’t be making one of my recipes to begin with, only because I don’t tend to spell out all those obvious parts like adding CHEESE.

I’m going to write an entire cookbook of “recipes” just like this.

Poor Punkin

Kiddo’s dad is working the graveyard shift this week, which meant I got to pick him up last night instead of today after school.

In fifty-degree weather, he greeted me in a pair of pants, a sleeveless shirt (and shoes with no socks with drives me UP the wall, with all the squishy-toe images it inspires.  blurgh) and NO jacket.

As we pulled away, a small voice piped up from the backseat, “Mom, do we have any sore throat medicine at home?”

He’s home sick today… snuggled into bed and resting.  Poor Punkin.
